Humble Vegetable Soup

I really don’t have energy to cook dinner, but my kids asking over and over that they want to eat something, sometime I don’t understand them, they already eat such a lot food and still complaining that they are still hungry haha. I think I should thanks God that luckily I don’t have any difficulties to make them eat, even for some strange food they have this willingness to tried, convincing them that at least giving it a try and knowing they’d love this strange food or just don’t like it.


Who wouldn’t eat that? then I decided to make something so simple, fast and I can sit back relax while cooking, haha super lazy. I remember there is some purple cauliflower left in fridge from yesterday cooking, and I really want to taste this Romanesco, so chop-chop. I just used garlic for this soup, just crush garlic and good quality vegetable stock in cube *am I a shame, nope I am not haha, sometime to make your life easier is good as long as you happy, but if you have sometime please make your own fresh stock. My little lady can’t get enough with this simple hearty soup, she asking it again just right before bedtime, can you feel me? haha

Here all you need


Serve 3


  • 4-5 Bud of cauliflower, I used the purple one, prepare it as you prefer
  • 4-5 Bud Romaneso, prepare as you prefer
  • 1 carrot, prepare as you prefer
  • 2 small size potatoes, cube it
  • 3 garlic cloves, crushed it
  • 2 scallion
  • 1 Celery stalk if you have it, unfortunately I don’t have it in my stock, to add celery will bring the freshness and savoury taste to the soup
  • 1 tbs light olive oil
  • 1 tsp salt
  • 1 tsp brown sugar
  • 1 liter water (or vegetable stock if you want to)
  • 1 good quality cube vegetable stock


  1. In medium heat, put medium size sauce pan then put inside olive oil and garlic, stir fry them just for minute until it fragrance
  2. Let in the carrot, potatoes, water and the stock cube, cooked it until they are soft
  3. After the potatoes and carrot are soft season with salt and brown sugar
  4. Let in the Romaneso and Cauliflower, cooked it for a while, keep them fresh and crunchy
  5. Serve it with slice scallion
  6. Yum-Yum, enjoyy
