NASI UDUK (RICE COOKED IN COCONUT MILK)

I Think you will be find this rice recipe a lot in my post, I love this dishes, it is also my kids favourite, If I cooked this dishes they will be ask more and more. Back in my home country, this rice is really humble menu that serve during breakfast, that companied by equally humble condiment such as fried rice noodle, Sambal goreng tempeh (tempeh that cooked with sambal), and for some fancy meal breakfast sometime it come with egg or any meaty protein based. But I will stick with the humble one. Yes, indeed Indonesian breakfast are quite heavy, but in my defend, breakfast for me is the highlight of my day, so it should be satisfying, energising, vibrant, nutritious and fulfilling. And the following meal for the rest of the day usually more lighter for me.

I make this recipe simple that able to cooked in big heavy pot or in rice cooker (next time I will post the traditional one, that need sometime and patience to cook it). But for me, while juggling with my kids, using rice cooker are really practical option. Also I will have sometime to do some other things, so just win win option.

And here all you need

NASI UDUK (RICE COOKED IN COCONUT MILK)

Serve 3-4 small portion

INGREDIENT

  • 300 gram basmati rice or long grain rice, wash is cold running water until the water of the rice becoming clear.
  • 200 ml thick coconut milk
  • 350 ml water
  • 2-3 bay leaf
  • 2-3 cm of cinnamon stick
  • 1 lemon grass, smash it
  • 1 tsp sea salt
  • 1/2 tsp white pepper

HOW TO

  1. If you are cooked using rice cooker, put all the ingredient together, and stir it well. And then press the cooked button, cooked until the rice cooker marked “warm”. Just after your rice cooker change mode into “warm” stir the rice well, since the cooking process still continue. leave it for at least 15 minute before you enjoy it.
  2. If you cooked using heavy pot, put all the ingredient together and stir it well. Used medium heat, and leave it until the liquid are bubbling away. When the liquid are half absorb (the rice texture are already half cooked) you need to stir the rice constantly, to avoid burning. Continue to stir until all the liquid are perfectly absorb  and the rice becoming fluffy. And by this way of cooking the rice are just ready to be enjoy right away.
