HUMBLE NOODLE SOUP

Finally, I and my kids are become a victim of the weather, the autumn here have not yet reaching it peak cold windy cold, but here I am, being a friend with tissue box *hehe. This dishes are cheap, warm and comforting, yet really easy to make, suitable by the end of month, when all the money are already run out, you getting cold and want comfort hug from the food *hehe.

I made this soup with the vegetable left in my fridge, staple stock of my fridge, carrot, yellow onion, broccolini (I just had it, you can used broccoli of course), and celery, that’s all, all season cheap, nutritious vegetable.

I serve this with simplicity, my kids are not fans of complicated flavour, not yet, which is good for them, I learn a lot to love simplicity for them, from there I can practice eating consciously and it enhance my tastebud. Please try it, now I can really appreciate like crush tomatoes alone, how it stand out, in my home made pizza (recipe later ;))

Here we are, to the recipe.

HUMBLE NOODLE SOUP

SERVE 3 to 4 small portion

INGREDIENT

  • 2 pcs vegetable base dried yellow Asian noodle (how to cooked chewy noodle, the trick later)
  • 2 small carrot, slice it as you prefer
  • 1 potatoes, cube it
  • 2 stalk celery, slice it rough
  • 1/2 yellow onion, dice it
  • 2 garlic, chop it rough
  • 1 thumb size ginger, crush it
  • 3-4 stalk broccolini, slice it into 2-3 small stalk (please used broccoli if you would prefer)
  • 1 litre of water or 1 litre vegetable stock
  • 1 tsp vegetable stock powder
  • Sea salt and pepper to taste
  • 1 tsp vegetable oil
  • chop celery leaves to serve or used parsley of you prefer
  • Fried onion to serve

HOW TO

  1. How to cook chewy noodle, in medium pot and medium heat, bring some water into boiled, then put inside the noodle. After noodle just soft enough, rinse through running cold water, to shock the noodle and stop the cooking process, then drain the water and set aside.
  2. For the soup, in medium pot and medium heat, put inside the vegetable oil, onion, garlic and ginger, stir until sweaty and fragrance. Then out inside the water.
  3. After the water in, put inside potatoes, carrot, celery stalk and cooked until they are soft.
  4. Season with the vegetable stock, sea salt and pepper, give it a taste and correct it according your preference.
  5. Lastly put inside the broccolini and turn off the heat.
  6. To serve, in medium bowl, put inside the noodle and pour the soup broth as well as the vegetables, serve with sprinkle of chop celery or parsley and fried onion.
