PASTA IN VEGETABLE BROTH

Pasta is one favourite ingredient of my kids, they love pasta so much. It is work like charm shortcut for me. When I don’t know what to cooked, or I just bored to cooked, when I don’t have much energy to prepare some complicated food, when they just don’t want to eat something with too much spices I already prepare, for all those time, the answer is always pasta. Pasta in anything, in cream, in tomatoes, just garlic and oil, that is their favourite, pasta with minimum seasoning. Put thing simple and simplicity are sophisticated are exactly the way their devour food, and I am not saying that my kids are sophisticated hahaha, they just normal kids with chaotic energy far from sophistication I must say.

This specific new favourite are come with story. In late spring, usually my daughter will go camping to mountain or farm with her friends from school, this annual agenda are organise by her school. She is not really outdoor kid, but with some correct ingredient, she would become free spirited soul that ready to devour adventure. Let her go for few days camping are hard for me, but I have to learn to let go, when she radiate happiness and excitement every time comeback from the camp are really rewarding for me.

Last year she was upset because everything is canceled because of the pandemic. During the camping, she told me a story, every night for dinner, one of the menu that serve are, pasta soup, that she love it so much, she would asked for another bowl and she is typical kid that usually stay quiet, unless she really interested on things. I said to her, the soup must be really delicious that you asked for more? Yes mommy, it would be really lovely if you could replicated it for me. at first I though it was pasta with vegetable soup in chicken broth. Turn out the soup are literally only with broth. So to have good quality broth is really the key for this recipe.

For the broth, I am using leek, carrot, celery stalk, shallot that I half then I roasted them in hot pan until slightly burn in one side and throw it into the broth, for touch of subtle papery taste I also used white radish, also if you want you can add whole seed of peppers, but my kids are sensitive for anything spicy, so for this broth I want something mellow, fragrance but fresh. Boiled them with enough water (the amount of the water are depend on how much you used the veggies, at least the veggies should be submerge into the water then add little more, because during the boiling process, the water are evaporating), When they are boiling perfectly put generously enough amount of salt then drain the veggies and keep the stock water.

Here are to make the Pasta, It is basically easy peasy as long as you already have ready to used vegetable broth in hand, but if you don’t have any time to made it yourself, ready to used store bough vegetable broth also do the job.

PASTA IN VEGETABLE BROTH

INGREDIENT

  • 1 litre vegetable broth
  • Hand-full or so tiny pasta or any small pasta or any funny shape pasta (my kids are really drawn into funny shape thing to eat hehe)
  • 1 garlic clove, crush (optional)
  • 1 spring of thyme (optional)
  • Sea salt and pepper (optional, if really needed)

HOW TO

  1. In medium pot and medium heat, put inside the vegetable broth, let is simmer to boiled.
  2. After the broth are soft boiling, put inside the pasta, cooked according to the packaging. Don’t forget to give it a taste. And adjusted according to your preference.
  3. When you got the balance you want, take out from the heat and ready to serve.
  4. Serve while it hot.
