TRADITIONAL INDONESIAN FRIED RICE AND KIMCHI FRIED RICE (Vegan Friendly Recipe)

Another comfort food recipe, actually fried rice are not really comfort food back in Indonesia, but this dishes are one of the dishes that I hold close to my heart, there is sentiment in this recipe, that’s the reason why this recipe are one of my comfort food . Actually this traditional fried rice are my mother recipe, and need just few ingredient to make it. One of the dishes that my whole family love and looking forward to enjoy it.

I remember when I was in junior high school, my mother often cook this dishes for me, just simple quick dishes for breakfast, yeahh you heard it right, usually we Indonesian enjoy this fried rice for breakfast with sunny side up egg. You always can improvised with this recipe, I am sharing the basic one, and there are a bunch recipe actually for Indonesian fried rice itself, will share another recipe later. Adding like bean sprout as vegetable, or adding soy sauce to add some edge, or adding carrot, green bean, or adding some sweet soy sauce, and the list I think could be endless.

In the other hand, fried rice kimchi are my first trial *wink, but I love it, it is spicy and tangy from the kimchi and easy to make it too, even though it was only me who ate it *haha due to spiciness.  I enjoy the fried rice with slice of creamy avocado and some arugula, uhh just yumm.

This both recipe are vegan friendly, So lets go to the recipe

INDONESIAN TRADITIONAL FRIED RICE

Serve 2 generous portion

INGREDIENT

  • 1 French shallot, big enough, this recipe will be more delicious with a lot of shallot
  • 2 garlic cloves
  • 1 red chilli, seed out, but if you love spicy you can add more chilli with the seed in
  • 2 plate of cool cooked basmati rice
  • 1-2 sea salt
  • 1-2 brown sugar
  • 1/2 tsp white pepper
  • 1 tbs soy sauce – optional
  • 1 tbs vegetable oil

HOW TO

  1. Make a paste of chilli, garlic, shallot, 1 tsp of sea salt, 1 tsp of brown sugar and pepper. You can always adjust the taste later.
  2. In medium size pan and medium heat, put inside the paste and the vegetable oil, sautéed them until fragrance.
  3. After the paste are fragrance, put inside the rice, stir them well thoroughly. Add the soy sauce if you want, and taste it. Then adjust the taste as you want or if necessary
  4. Put the high heat on, and stir it for at least 5-6 minute to give smokey flavour
  5. Take it off from the heat and ready to enjoy

 

KIMCHI FRIED RICE

Serve 2 generous portion

INGREDIENT

  • 1 medium size french shallot, slice it
  • 2 garlic cloves, slice it
  • 1 tbs gochugaru or Korean chilli flake, this chilli flake added some different taste to the recipe, sourness and subtle smokey taste
  • 2-3 table spoon kimchi, I used my instant kimchi, recipe are here MY INSTANT KIMCHI AND HOW I ENJOY IT
  • 1 tbs soy sauce
  • 1 tbs sea salt
  • 1 tbs brown rice
  • 2 plate of cool cooked basmati rice
  • 1 spring onion, slice it – optional
  • 1 tbs vegetable oil

HOW TO

  1. In medium size pan and medium heat, put inside vegetable oil, garlic and shallot. Sautéed them until fragrance.
  2. After the shallot and garlic are fragrance, put inside the kimchi and the gochugaru. Stir them 2-3 minute, season with sea salt, soy sauce and brown sugar.
  3. Add the rice and spring onion if you have it, stir the rice thoroughly until the rice are a bit dried, in hight heat for at least 5-7 minute.
  4. Take off from the heat and ready to enjoy.
