VEGAN KOREAN BULGOGI

This one are my adaptation of Korean bulgogi in Vegan way, I think the key to make this dishes are the marinating, proper marinating going to create proper flavouring. In this adaptation I am going to used Heura, but you also could used any other protein source such as lightly pan fried tofu or tempe. I choose original Heura because of it versatility, basic and easy to infused with flavour.

In this recipe I am going to used oyster sauce but you also could used vegan oyster sauce or vegetarian sauce, unfortunately I run out of it, so I used what available in my cupboard.

I also going to write the side dishes to company this dishes, i was got kimchi and Spinach in sesame oil, while you could get my instant kimchi here ……  i would the Spinach in sesame oil later in the end of this post.

VEGAN KOREAN BULGOGI

INGREDIENTS

MARINATING

2 tbs oyster sauce (I used vegan stir fried sauce)

2 tbs good soy sauce

1 tbs brown sugar

1/2 tsp white pepper

1/2 onion, slice it

3 clove of garlic, crush and chopped

OTHER INGREDIENTS

250 gram heura

1 tbs sesame oil

1 tbs olive oil

toasted sesame seed — optional

HOW TO 

  • Mixed the marinating sauce thoroughly, bring in the Heura and mixing it through, let sit for minimum 1 hour
  • in Medium pan and medium heat, put inside the olive oil then the Heura mixture, stirred until fragrance, the onion soft and don’t forget to give   a taste, corrected it accordingly
  • lastly stir in the sesame oil, stirred it through again for approximately few minute 
  • take it out from the heat
  • ready to enjoy as it is with warm rice and sprinkle of toasted sesame seed

SPINACH IN SESAME OIL

INGREDIENTS

200 gram big leave spinach

1 tbs sesame oil

1 tsp finely chopped garlic

1/2 tsp sea salt

pinch of fresh ground white pepper

toasted sesame seed — to serve — optional

HOW TO

  • in hot pot with boiling water, put inside the spinach, just cooked until it soft and taking it out then put it in into bowl of ice water
  • squeeze gently the spinach and put it in bowl, seasoned with the garlic, sea salt, white pepper and sesame oil, mixed it gently and thoroughly
  • ready to enjoy with warm rice and sprinkle of toasted sesame seed
