KITCHEN SCRAPS VEGGIES PATTIES

This are left over from my juicing routine, the pulp. I feel so sad to just to throw the pulp away, so here is the experimentation coming from.

This recipe are so flexible depend on how much your pulp is and what kind of vegetable are using, this recipe are being here are probably just serving as your inspiration, don’t be afraid of playing dirt in the kitchen and get your hand dirty, it is lot of fun in it. Am I convinced you yet? šŸ˜€

Before hand, please forgive me for using ketchup as a condiment :D, well nothing wrong with it though.

KITCHEN SCRAPS VEGGIES PATTIES

INGREDIENT

  • 2 Carrot
  • 1 thumb size ginger
  • 1 medium size cucumber
  • 1 stalk celery
  • 1-2 cup water depend on how much veggies you are using– if you don’t get juicer in hand blender the veggies with this water, otherwise omit it
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 all purpose flour — depend on how much pulp you got in hand, this flour only act as binding agent
  • Light olive oil to shallow fried the patties.

HOW TO

  1. Juice all the veggies, according to your machine instruction. If not blend the veggies with the water, then squeeze the juice and extract the pulp, same method also what you need to do on juicing machine.
  2. Put the pulp in medium size bowl, put inside all the seasoning, as well as the flour, pay attention on adding the flour, add the flour just until the dough are able to shape into patties, don’t over do it, also don’t forget to give a taste, and corrected it accordingly.
  3. Shape the dough into small easy to bite size patties, I shape mine as biting size serving, as it I would enjoy it as finger food snacking.
  4. I medium pan and medium heat put inside the olive oil, not too much as we would do shallow frying, when the oil hot enough, put inside the patties, fried until golden outside it.
  5. When it golden, taking it out from the heat, and ready to serve with condiment you would preferred or enjoy it as it is.
